Spicy Fried Catfish with Aromatic Sauce

Ingredients:

  • 5 pieces of catfish, cleaned thoroughly
  • 4 red curly chilies
  • 3 fat bird’s eye chilies
  • 4 shallots
  • 3 cloves of garlic
  • 1 stalk of green onion
  • 1/2 sachet of fried fish seasoning (such as Bumbu Racik)
  • Salt, sugar, and pepper to taste
  • 1/2 block of shrimp paste (such as ABC shrimp paste)
  • 1 candlenut, crushed

Instructions:

  1. Prepare the Fish: Rinse the catfish thoroughly and pat dry. Rub the fish with the fried fish seasoning. Let it marinate in the refrigerator for at least 30 minutes to allow the flavors to penetrate.

  2. Prepare the Spice Mixture: Slice all the spices (red curly chilies, bird’s eye chilies, shallots, and garlic).

  3. Cook the Spice Mixture: Heat a generous amount of oil in a pan over medium heat. Add the sliced spices and shrimp paste. Sauté until the mixture becomes fragrant and the spices are softened.

  4. Simmer: Pour in enough water to create a sauce base. Let it simmer until the mixture starts to bubble and intensify in aroma.

  5. Cook the Fish: Add the marinated catfish to the pan. Cook the fish in the spicy sauce, turning occasionally, until the fish is fully cooked and the flavors have melded.

  6. Finish with Green Onion: Add the chopped green onion to the pan, stirring gently to combine.
