Crispy Chicken Wings with Homemade Spice Blend

Ingredients:

  • 500 grams chicken wings, cleaned and set aside
  • 350 grams all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 egg white
  • Ice-cold water
  • For Marinade:
    • 6 cloves shallots
    • 3 cloves garlic
    • 1 teaspoon ground coriander
    • ½ teaspoon ground black pepper
    • 1 teaspoon salt
  • Cooking oil, for frying

Instructions:

  1. Prepare the Marinade:

    • In a blender or food processor, combine the shallots, garlic, ground coriander, ground black pepper, and salt. Blend until you achieve a smooth paste.
  2. Marinate the Chicken Wings:

    • Place the cleaned chicken wings in a large bowl. Add the spice paste and mix well to ensure the wings are evenly coated.
    • Add the egg white to the bowl and mix again, ensuring that each piece of chicken is thoroughly coated. Add a little ice-cold water to create a slightly thicker marinade if needed.
    • Cover the bowl and refrigerate for about 30 minutes to allow the flavors to infuse into the chicken.
  3. Prepare the Coating:

    • In a separate bowl, mix the all-purpose flour with baking powder and salt.
    • In another bowl, prepare an ice-cold water bath.
  4. Coat the Chicken Wings:

    • Remove the marinated chicken wings from the refrigerator. Dip each wing into the flour mixture, ensuring an even coating.
    • Next, dip the floured wings into the ice-cold water bath. This step helps create a crispier texture.
    • After dipping in the ice-cold water, return the wings to the flour mixture. Gently press and pat the flour onto the wings to form a thick coating.
  5. Fry the Chicken Wings:

    • Heat a generous amount of cooking oil in a deep pan or frying pot over medium-high heat.
    • Carefully add the coated chicken wings to the hot oil, a few at a time, to avoid overcrowding the pan.
    • Fry the wings until they turn golden brown and are crispy, about 8-10 minutes, turning occasionally to ensure even cooking.
    • Use a slotted spoon to remove the wings from the oil and drain them on paper towels to remove excess oil.
  6. Serve:

    • Transfer the crispy chicken wings to a serving platter. Serve hot with your favorite dipping sauces or enjoy them as they are!
