Ingredients:
- 2 ounces of klotok (boiled in hot water for about 1 minute to reduce any bitterness)
- 4 cloves garlic, finely chopped
- 5 shallots, finely chopped
- 8 green chilies, sliced diagonally
- 7 bird’s eye chilies (adjust to taste), chopped
- 6 tablespoons sweet soy sauce (I use Bango brand)
- Half a tomato, chopped
- 3 bay leaves
- A few slices of galangal (crushed)
- Salt, to taste
- Cooking oil, for sautéing
