Ikan Bawal Bun Taucio Recipe

Ingredients:

  • 2 white pomfret fish (ikan bawal putih)
  • 2 cloves garlic, finely chopped
  • Fresh ginger, thinly sliced
  • Dried shiitake mushrooms (hioko), soaked in hot water
  • 1 bunch green onions, sliced into 1 cm pieces
  • 1 teaspoon salted taucio (fermented soybeans)
  • 1 large chili pepper, thinly sliced
  • Soy sauce
  • Ground black pepper
  • Seasoning (optional)
  • Cornstarch mixed with cold water

Instructions:

  1. Prepare the Fish: Heat oil in a frying pan and fry the pomfret fish until the skin is crispy. Remove the fish from the pan and drain on paper towels.

  2. Make the Sauce: In a separate wok or pan, heat a small amount of oil. Add the finely chopped garlic, sliced ginger, and chili pepper. Stir-fry until fragrant.

  3. Add Ingredients: Incorporate the soaked shiitake mushrooms and continue to stir-fry. Add a splash of water to the pan.

  4. Season the Sauce: Stir in the salted taucio and soy sauce. Season with ground black pepper and, if desired, a pinch of seasoning to taste.

  5. Thicken the Sauce: Mix cornstarch with cold water to create a slurry. Add this mixture to the pan to thicken the sauce, stirring well.

  6. Combine: Gently add the crispy fried fish to the sauce, flipping briefly to coat the fish.
