Garang Asem Ayam Kampung Sederhana

Ingredients

  • Free-range chicken (Ayam kampung), cut into pieces
  • Green chilies (Cabe ijo)
  • Bird’s eye chilies (Rawit ijo)
  • Green tomatoes or bilimbi fruit (Tomat ijo/belimbing sayur)
  • Shallots (Bawang merah)
  • Garlic (Bawang putih)
  • Salt (Garam)
  • Granulated sugar (Gula pasir)
  • Seasoning (Penyedap)
  • Coconut milk (Santan)
  • Bay leaves (Daun salam)
  • Lemongrass (Sereh)
  • Banana leaves for wrapping (Daun pisang)

Steps

  1. Preparation of Chicken: Cut the free-range chicken into pieces as per your preference and wash it thoroughly.

  2. Marinating the Chicken: Pound shallots, garlic, and salt until smooth. Rub the mixture evenly on the chicken pieces. Let it sit for about an hour to allow the flavors to infuse.

  3. Adding Ingredients: After marinating, add sliced green chilies, bird’s eye chilies, green tomatoes or bilimbi fruit, sugar, seasoning, and coconut milk to the chicken. Mix well.

  4. Wrapping with Banana Leaves: Place the chicken mixture on a banana leaf, which has been lined with bay leaves and lemongrass. Wrap it securely to form a neat package.

  5. Steaming: Steam the wrapped chicken for approximately 2 hours. For a quicker method, you can use a pressure cooker to reduce the cooking time.

  6. Serving: Once done, carefully unwrap the banana leaves and serve the aromatic and flavorful Garang Asem Ayam Kampung hot.
