Ingredients
- 500 grams fresh tuna (including bones and meat)
- For the Spice Paste:
- 5 shallots
- 2 small cloves of garlic
- 3 candlenuts
- 3 cm fresh ginger
- 3 cm fresh turmeric
- Salt to taste
- Additional Ingredients:
- 2 small lemongrass stalks
- 1 turmeric leaf (optional)
- 2 kaffir lime leaves
- Fresh basil leaves (kemangi)
- 1 tomato
- 1 red chili pepper
- 7 bird’s eye chilies (adjust to taste)
- Juice of 1 lime (or lemon)
- 1000 ml water

Prepare the Tuna:
- Rinse the tuna thoroughly and squeeze with lime juice. Let it sit for about 10 minutes, then rinse again to remove excess lime juice.

Make the Spice Paste:
- In a blender or food processor, blend the shallots, garlic, candlenuts, ginger, turmeric, and salt until smooth.

Cook the Spice Paste:
- Heat a bit of oil in a pan over medium heat. Add the spice paste, along with the tied lemongrass stalks, turmeric leaf (if using), and kaffir lime leaves. Sauté until the paste becomes fragrant and starts to release its oils.

- Add the tuna pieces to the pan and stir well to coat with the spice paste. Cook for a few minutes until the tuna is well-mixed with the paste.

- Pour in the water, stir, and bring to a simmer. Reduce the heat to low and let it cook gently.

- When the water starts to reduce and the tuna is cooked through, add the sliced red chili, bird’s eye chilies, tomato slices, and fresh basil leaves. Adjust the seasoning with additional salt if necessary. For a richer flavor, you can also add ½ teaspoon of chicken bouillon powder.
