Cap Jay Ayam (Indonesian Chicken Stir-Fry with Vegetables)

Ingredients:

  • 1/4 chicken, cut into pieces
  • 1 head of cauliflower, cut into florets
  • 1 carrot, sliced
  • 5 green beans, cut into pieces
  • A handful of green mustard leaves (sawi hijau), roughly chopped
  • 1 onion, thinly sliced
  • 2 green onions, chopped
For the Spice Paste (Bumbu Halus):
  • 3 cloves of garlic
  • 2 candlenuts (kemiri)
  • 1/2 teaspoon white pepper

Seasonings:

  • Salt, to taste
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • Cornstarch, diluted in water

Instructions:

  1. Prepare the Spice Paste:

    • Using a mortar and pestle or a blender, grind the garlic, candlenuts, and white pepper until they form a smooth paste.
  2. Prep the Vegetables:

    • Thinly slice the onion.
    • Cut the cauliflower into florets.
    • Slice the carrot.
    • Cut the green beans into pieces.
    • Roughly chop the green mustard leaves.
  3. Cook the Aromatics:

    • In a large wok or skillet, heat a small amount of oil over medium heat.
    • Add the sliced onion and stir-fry until it becomes translucent and fragrant.
  4. Incorporate the Spice Paste:

    • Add the prepared spice paste to the wok, stirring constantly until it releases its aroma.
  5. Cook the Chicken:

    • Add the chicken pieces to the wok and stir-fry until they begin to turn golden brown.
    • Pour in enough water to cover the chicken and bring it to a boil.
  6. Add the Vegetables:

    • Once the water is boiling, add the carrot slices and cook for a few minutes until they start to soften.
    • Next, add the green beans and cauliflower florets, stirring to combine.
  7. Season the Dish:

    • Season with salt, oyster sauce, and a touch of sugar, adjusting to taste.
    • Stir well to ensure all the vegetables and chicken are evenly coated with the sauce.
  8. Finish with Mustard Leaves:

    • Add the chopped green mustard leaves and stir until they wilt and integrate into the dish.
  9. Thicken the Sauce:

    • Finally, add the diluted cornstarch to the wok, stirring continuously until the sauce thickens to your desired consistency.
  10. Serve:
