Patin Bumbu Kuning: A Delightful Indonesian Yellow Catfish Stew

Ingredients:

  • 1 whole patin fish, cut into slices
  • 8 cloves garlic
  • 5 shallots
  • 65 ml Kara coconut milk
  • 2 inches ginger
  • 3 inches turmeric
  • 2 inches galangal
  • 2 bay leaves
  • 1 lemongrass stalk
  • 1 lime
  • 3 candlenuts
  • Salt, sugar, and seasoning to taste
  • 20 bird’s eye chilies
  • 1 bunch of basil
  • 1 tomato

Instructions:

  1. Prepare the Spice Paste: Begin by grinding the garlic, candlenuts, ginger, turmeric, and galangal into a fine paste. This aromatic blend forms the heart of the dish’s flavor.

  2. Prepare the Fish: Clean the patin fish slices and marinate them with lime juice. Allow the fish to sit for a few minutes to absorb the tangy lime flavor and help remove any fishy odor.

  3. Cook the Spice Paste: Heat oil in a pan over medium heat. Once hot, add the ground spice paste along with the sliced shallots, bay leaves, bruised lemongrass, and galangal. Sauté until fragrant and the shallots are softened.

  4. Add Water and Chilies: Pour in two cups of water and add the bird’s eye chilies. Stir the mixture well, allowing it to come to a boil.

  5. Simmer the Fish: Gently place the marinated fish slices into the pan. Be careful not to stir too frequently to prevent the fish from breaking apart. Allow the fish to cook through, absorbing the rich flavors of the spice paste.

  6. Incorporate Coconut Milk: Once the fish is cooked, slowly add the Kara coconut milk, stirring gently to combine. This step will create a creamy, flavorful sauce while ensuring that the fish remains intact.

  7. Adjust the Seasoning: Taste the stew and adjust the seasoning with salt, sugar, and any additional seasoning to your preference. Let the stew simmer until the sauce thickens slightly and the flavors meld together.

  8. Add Fresh Ingredients: Finally, add the sliced tomato and washed basil leaves. Stir gently and cook for another minute or so, just enough to let the basil wilt and the tomato soften.

  9. Serve and Enjoy: Your Patin Bumbu Kuning is now ready to be enjoyed. Serve hot with steamed rice for a truly satisfying meal. This homemade Indonesian delicacy is sure to impress with its rich flavors and aromatic spices.

Enjoy the delightful taste of this traditional Indonesian fish stew, crafted with love and perfect for any home-cooked meal.
