Sardine and Potato Delight

Ingredients:

  • 1 small tin of sardines
  • 3 potatoes, boiled and cut into chunks
  • 4 bird’s eye chilies, thinly sliced
  • 1/2 bulb of garlic, thinly sliced
  • 2 medium shallots, thinly sliced
  • Water (as needed)
  • Salt and seasoning to taste
  • Cooking oil

Instructions:

  1. Prepare the Ingredients: Begin by heating a generous amount of cooking oil in a skillet over medium heat. Once the oil is hot, add the sliced garlic and shallots. Sauté until they become fragrant and golden brown.

  2. Add the Chilies: Incorporate the sliced bird’s eye chilies into the skillet. Stir them with the garlic and shallots, allowing the spices to blend together and infuse the oil with their aroma.

  3. Combine with Potatoes: Gently add the boiled potato chunks to the skillet. Toss them with the sautéed spices to ensure they are well coated and begin to absorb the flavors.

  4. Incorporate the Sardines: Open the tin of sardines and add them, along with their oil, to the skillet. Mix gently to combine everything thoroughly.

  5. Add Liquid and Season: Pour in enough water to cover the ingredients. Season with salt and a little extra seasoning as desired. Stir everything together and bring the mixture to a simmer.

  6. Simmer and Adjust: Let the dish simmer for a few minutes, allowing the flavors to meld together. Taste and adjust the seasoning if needed.

  7. Finish and Serve: Once the potatoes are fully cooked and have absorbed the flavors, remove from heat. Transfer to a serving dish and enjoy this delightful sardine and potato dish hot.
