Cakalang Suwir Recipe

Ingredients:

  • 1 whole cakalang fish (skipjack tuna)
  • 10 shallots
  • 8 garlic cloves
  • 1 handful of red chilies
  • 1 segment of galangal
  • Sugar, to taste
  • Salt, to taste
  • Seasoning, to taste
  • Cooking oil

Instructions:

  1. Prepare the Fish: Start by cleaning the cakalang fish thoroughly. Once cleaned, fry the fish until it is dry and crispy. Allow it to cool slightly before shredding it into fine pieces.

  2. Prepare the Aromatics: Slice the shallots, garlic, and red chilies thinly. Also, slice the galangal into thin pieces.

  3. Cook the Aromatics: In a pan, heat a generous amount of cooking oil. Add the sliced shallots, garlic, red chilies, and galangal to the hot oil. Sauté the mixture until the aromatics become fragrant and start to turn golden brown.

  4. Season the Dish: Once the aromatics are cooked, season with salt, sugar, and seasoning to taste. Adjust the seasoning according to your preference.

  5. Add Liquid: Pour in a little water to create a light sauce. Stir well to combine all the flavors.

  6. Combine with Fish: Add the shredded cakalang fish into the pan. Mix thoroughly, ensuring the fish is well-coated with the aromatic mixture.

  7. Cook Through: Continue to cook until the fish is well-cooked and has absorbed the flavors from the seasoning and aromatics.

  8. Serve: Transfer the cakalang suwir to a serving dish. Serve hot as a delicious accompaniment or main dish.

This recipe for cakalang suwir delivers a rich blend of flavors, perfect for those who enjoy a savory and spicy dish. Enjoy this traditional Indonesian delight with rice or as part of a larger meal.
