Orak Arik Tongkol Pedas: A Spicy Tuna Stir-Fry Recipe

Ingredients:

  • 2 large pieces of fresh pindang tuna (or substitute with fresh tuna)
  • 2 green chilies, sliced diagonally
  • 2 large red chilies, sliced diagonally
  • 4 cloves of garlic, thinly sliced
  • 4 shallots, thinly sliced
  • 1 tablespoon oyster sauce
  • Sesame oil, for a fragrant touch
  • 1 teaspoon sweet soy sauce (kecap manis)
  • Chili powder, to taste (adjust according to your heat preference)
  • Salt, to taste
  • 1 teaspoon seasoning powder (Masako or similar)
  • Lemon juice, for marinating

Steps:

  1. Prepare the Tuna: Start by marinating the fresh pindang tuna pieces in lemon juice. This not only tenderizes the fish but also imparts a slight tanginess. After marinating, steam or lightly fry the tuna until it is about halfway cooked, according to your preference. This step ensures the fish remains moist and flavorful.

  2. Sauté the Aromatics: In a pan, heat a generous amount of sesame oil over medium heat. Add the thinly sliced garlic and shallots to the pan. Sauté until the garlic and shallots are fragrant and golden brown.

  3. Add the Chilies: Once the aromatics are ready, introduce the sliced green and red chilies to the pan. Continue to sauté for a few more minutes until the chilies start to soften.

  4. Combine Tuna and Sauces: Gently add the partially cooked tuna to the pan. Lower the heat to prevent burning. Pour in the oyster sauce and sweet soy sauce, stirring well to coat the tuna and vegetables with the sauces.

  5. Season the Dish: Sprinkle in the chili powder to your desired level of spiciness. Since the pindang tuna is already salted, use salt sparingly. Add a pinch of seasoning powder (Masako) to enhance the overall flavor. Stir everything together, allowing the flavors to meld.

  6. Finish and Serve: Continue to stir-fry until the tuna is fully cooked and the flavors are well combined. Once done, remove from heat. The dish should have a rich aroma of sesame oil and a balanced spicy flavor.
