Pepes Ayam Selimut Tahu: A Delightful Indonesian Recipe

Ingredients:

  • 10 chicken wings
  • 10 small cubes of white tofu
  • 1/2 onion, finely chopped
  • 2 dried red chilies
  • 2 stalks of green onions
  • 8 bay leaves
  • A handful of basil leaves
  • 1 ripe tomato
  • 8 bird’s eye chilies (left whole)

For the Spice Paste:

  • 1-inch piece of turmeric, peeled
  • 5 candlenuts
  • 4 cloves of garlic
  • 4 shallots
  • Ground pepper
  • Seasoning
  • Salt
  • Granulated sugar

Additional:

  • Banana leaves
  • Toothpicks

Steps:

  1. Prepare the Tofu: Using a fork, mash the tofu to break it up. Combine all the spices, seasoning, salt, and sugar, then mix well to ensure the tofu is evenly coated.

  2. Prepare the Chicken Wings: Take each chicken wing and place a piece of tofu inside. Fold the wing around the tofu and secure the ends with toothpicks.

  3. Prepare the Steamer: Preheat your steamer. Place the chicken wings wrapped with tofu into the steamer basket.

  4. Steam: Steam the chicken wings for approximately 2 hours, or until fully cooked.

  5. Serve: Carefully remove the toothpicks and serve the Pepes Ayam Selimut Tahu hot, garnished with fresh basil leaves and accompanied by steamed rice for a complete meal. Enjoy this traditional Indonesian dish with its rich, aromatic flavors and tender, flavorful chicken.
