Sweet Soy Sauce Patin Fish

Ingredients:

  • 1/2 kg Patin fish (or any similar firm fish)
  • 1 large onion, thinly sliced
  • Ground spice mix:
    • 6 red chili peppers
    • 4 shallots
    • 3 cloves garlic
    • 2 cm ginger
    • 2 cm galangal
  • Sweet soy sauce (kecap manis), to taste
  • Salt, to taste
  • Cooking oil, for sautéing

Instructions:

  1. Prepare the Fish: Begin by frying the patin fish until it is half-cooked. Set it aside once done.

  2. Sauté the Aromatics: Heat some oil in a pan over medium heat. Add the thinly sliced onion and cook until it becomes translucent. Next, add the ground spice mix, which consists of red chili peppers, shallots, garlic, ginger, and galangal. Sauté until the mixture becomes fragrant and the onions are softened.

  3. Combine Ingredients: Gently add the partially cooked fish to the pan. Pour in the sweet soy sauce and season with salt to taste. Stir to combine, ensuring the fish is well-coated with the sauce and spices.

  4. Simmer: Allow the dish to simmer, letting the flavors meld and the fish cook through. Adjust the seasoning if necessary.

  5. Finish and Serve: Once the fish is fully cooked and the sauce has thickened and infused into the fish, the dish is ready. Serve it hot and enjoy the savory, sweet, and spicy flavors.
