Spicy Chicken Feet and Wings (Ceker Sayap Ayam Pedas)

Ingredients:

  • 1/2 kg chicken feet (cleaned)
  • 1/2 kg chicken wings (cut into 2 pieces)
  • 5 shallots
  • 3 garlic cloves
  • 1/4 thumb-sized turmeric
  • 1/4 thumb-sized ginger
  • 1/4 teaspoon black pepper
  • 6 red curly chilies
  • 6 bird’s eye chilies
  • 2 bay leaves
  • 2 scallions (chopped)
  • Water (as needed)
  • Salt (to taste)

Instructions:

  1. Prepare the Chicken: Begin by boiling the cleaned chicken feet and wings along with the bay leaves for about 30 minutes. This process helps to eliminate any unpleasant odors. Once cooked, drain the chicken pieces and set them aside.

  2. Blend the Spices: While the chicken is cooking, prepare the spice paste. Blend the shallots, garlic, turmeric, ginger, black pepper, red curly chilies, and bird’s eye chilies until you achieve a smooth paste.

  3. Cook the Spice Paste: Heat some oil in a pan over medium heat. Add the blended spice paste to the pan and sautΓ© until fragrant and the oil begins to separate from the paste.
