Tenggiri Masak Santan Cabe Hijau: A Delicious Indonesian Fish Dish

Ingredients:

  • 500 grams tenggiri fish, cut into pieces
  • 5 green chilies, sliced diagonally
  • 1 large red tomato, cut into 6 wedges
  • 2 bay leaves
  • 1 lime
  • 300 ml coconut milk (from Kara 65 ml + water)
  • Salt and sugar, to taste
For the Spice Paste:
  • 2 large red chilies
  • 2 large shallots
  • 3 cloves garlic
  • 2 candlenuts
  • 2 cm turmeric
  • 2 cm ginger

Instructions:

  1. Prepare the Fish:

    • Squeeze the tenggiri pieces with lime juice. Let it marinate for about 10 minutes, then rinse. Season with 1 teaspoon of salt and toss well. Fry the pieces until the skin becomes crispy and golden brown. Set aside.
  2. Make the Spice Paste:

    • Blend the red chilies, shallots, garlic, candlenuts, turmeric, and ginger into a smooth paste using a food processor or mortar and pestle.
  3. Cook the Spice Paste:

    • Heat a bit of oil in a pan over medium heat. Sauté the spice paste until it becomes fragrant and aromatic.
  4. Add the Aromatics:

    • Add the sliced green chilies and bay leaves to the pan. Stir well to combine.
  5. Incorporate the Coconut Milk:

    • Pour in the coconut milk and bring the mixture to a gentle simmer.
  6. Combine and Simmer:

    • Once the coconut milk starts to heat up, add the fried tenggiri pieces and tomato wedges. Season with salt and sugar according to your taste. Stir gently to ensure everything is well mixed.
  7. Finish Cooking:

    • Allow the dish to simmer until the coconut milk is fully heated through and slightly reduced. Adjust seasoning if needed.
  8. Serve:

    • Remove from heat and serve hot with steamed rice for a complete meal.
