    • 1 piece of galangal
    • 1 piece of turmeric
    • 2 cloves garlic
    • 3 shallots

  • Tamarind paste (to taste)
  • Water

Instructions:

  1. Prepare the Fish:

    • Clean the tenggiri fish thoroughly and pat it dry.
    • Fry the fish until it is half-cooked. This step enhances the flavor and texture of the fish, making it more savory.
  2. Cook the Spice Paste:

    • Blend the ginger, galangal, turmeric, garlic, shallots, and red chili peppers into a smooth paste.
    • Heat a little oil in a pan over medium heat and sauté the spice paste along with the smashed lemongrass until fragrant and golden.
  3. Create the Broth:

    • Add water to the pan with the sautéed spice paste. Stir in tamarind paste to taste.
