Oseng Sayur Tenggiri: A Flavorful Stir-Fry with Mackerel and Vegetables

Ingredients:

  • 1 piece of mackerel (partially fried)
  • Green beans (quantity as desired)
  • 1 Chinese okra (also known as “oyong”)
  • 1 pack of egg tofu (sliced)
  • 3 cloves of shallots (finely chopped)
  • 2 cloves of garlic (finely chopped)
  • Red chili peppers (sliced thinly)
  • Bird’s eye chili peppers (sliced thinly)
  • 1 piece of shrimp paste (terasi)
  • Salt (to taste)
  • Black pepper (to taste)
  • Seasoning (to taste)

Instructions:

  1. Prepare the Vegetables: Begin by slicing the Chinese okra (oyong) and green beans into bite-sized pieces. Rinse them thoroughly under cold water to remove any impurities.

  2. Prepare the Mackerel: Cut the mackerel into bite-sized chunks if not already done. Set aside.

  3. Prepare the Tofu: Slice the egg tofu into small pieces and set aside.

  4. Cook the Aromatics: Heat a generous amount of oil in a large skillet or wok over medium heat. Add the finely chopped shallots and garlic. Sauté until fragrant and golden brown.

  5. Add the Chilies and Shrimp Paste: Stir in the sliced red chili peppers, bird’s eye chili peppers, and the piece of shrimp paste. Continue to cook, stirring frequently, until the mixture becomes aromatic.

  6. Incorporate the Mackerel and Tofu: Add the partially fried mackerel and sliced egg tofu to the skillet. Season with salt and cook until the mackerel starts to dry out slightly.

  7. Add the Vegetables: Introduce the green beans and Chinese okra to the skillet. Season with black pepper and your choice of seasoning. Stir well to combine all ingredients.

  8. Cook Until Done: Continue to cook the mixture, stirring occasionally, until the vegetables are tender and the mackerel is fully cooked. Adjust seasoning as needed.
