Mie Ayam Endeus: Savory Indonesian Chicken Noodles

Ingredients:

  • For the Chicken:

    • 1/2 chicken
    • 2 stalks green onions (daun bawang)
    • 2 pieces egg noodles (mie telur)
  • For the Chicken Spice Paste:

    • 4 cloves garlic
    • 7 shallots
    • 3 candlenuts (kemiri)
    • 1 teaspoon coriander seeds (ketumbar)
    • 1 thumb-sized piece of turmeric (kunyit)
    • 1 teaspoon black pepper (lada)
    • (Grind all ingredients together)
  • Additional Ingredients:

    • 2 bay leaves (daun salam)
    • 2 kaffir lime leaves (daun jeruk)
    • 2 stalks lemongrass, bruised
    • 2 thumb-sized pieces of galangal (lengkuas), bruised
    • 1 tablespoon sweet soy sauce (kecap manis)
    • 1 tablespoon oyster sauce (saos tiram)
    • 1/2 teaspoon salt
    • 1 teaspoon sugar
  • For the Broth:

    • 3 cloves garlic, bruised
    • 1 thumb-sized piece of ginger, bruised
    • 1 teaspoon sesame oil (minyak wijen)
    • (Boil the chicken first to make a rich broth. After cooking, shred the chicken.)
  • For Serving:

    • 1 teaspoon soy sauce (kecap asin)
    • A pinch of MSG (sasa/ajinomoto, optional)
  • For the Sambal:

    • 5 red bird’s eye chilies (rawit merah)
    • 5 green bird’s eye chilies (rawit hijau)
    • 2 red chilies
    • (Boil the ingredients and then grind into a paste)

Instructions:

  1. Prepare the Chicken:

    • Begin by boiling the chicken with the ginger and garlic until fully cooked. Once cooked, remove the chicken, shred it into pieces, and set aside.
  2. Prepare the Spice Paste:

    • Heat a generous amount of oil in a pan. Once hot, add the ground spice paste along with the galangal, lemongrass, bay leaves, and kaffir lime leaves. Sauté until fragrant.
  3. Cook the Chicken:

    • Add the shredded chicken to the pan and mix well with the spices. Pour in enough water to cover the chicken. Season with sugar, MSG (if using), sweet soy sauce, salt, and oyster sauce. Cook until the liquid reduces slightly.
  4. Cook the Noodles:

    • Boil the egg noodles according to package instructions or to your desired level of doneness. Drain and set aside.
  5. Prepare the Broth:

    • In a separate pot, heat sesame oil and sauté the bruised garlic and ginger. Add some of the chicken broth from the initial cooking to the pot and let it simmer.
  6. Assemble the Dish:

    • In a serving bowl, add a teaspoon of soy sauce and a bit of the oil used for cooking the chicken. Toss with a pinch of MSG if desired. Add the cooked noodles and mix well with chopsticks.

    • Top with shredded chicken, sliced green onions, and ladle over the hot broth. Serve with sambal on the side for those who enjoy a spicy kick.
