Description

A delicious and wholesome dish from the classic Lipton Soup Cookbook, this Broccoli Casserole with Crumb Topping can also be made with cauliflower, offering a delightful variation. This recipe is perfect for a quick, satisfying meal and is both healthy and easy to prepare. With its rich flavors and crisp topping, it makes for an excellent side dish or a light main course.

Ingredients

  • 2 cups broccoli florets or cauliflower florets (your choice)
  • 1/2 cup mozzarella cheese, shredded
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons olive oil, divided
  • 2 cloves garlic, minced
  • 1 package (6 ounces) onion soup mix
  • 1 cup water
  • 1 cup diced tomatoes

Instructions

  1. Prepare the Crumb Topping
In a small bowl, combine the breadcrumbs, shredded mozzarella cheese, chopped fresh parsley, 1 tablespoon of olive oil, and minced garlic. Mix well and set this aside for later use.

  2. Cook the Vegetables
Heat the remaining 1 tablespoon of olive oil in a 12-inch skillet over medium heat. Add the broccoli or cauliflower florets and cook, stirring frequently, for about 2 minutes.

  3. Add the Onion Soup Mix
Stir in the onion soup mix blended with water. Increase the heat to high and bring the mixture to a boil.

  4. Simmer
Once boiling, reduce the heat to low and let it simmer uncovered, stirring occasionally, for about 8 minutes or until the broccoli or cauliflower is almost tender.

  5. Incorporate Tomatoes
Add the diced tomatoes to the skillet and simmer for an additional 2 minutes, allowing the flavors to meld together.

  6. Assemble the Casserole
Spoon the vegetable mixture into a 2-quart broiler-proof baking dish. Evenly spread the prepared crumb topping over the vegetables.

  7. Broil
Place the baking dish under the broiler and cook for 1 1/2 minutes or until the crumb topping is golden brown and the cheese is melted.
