Sautéed Beef Skin and Tofu (Oseng-Oseng Kulit Sapi & Tahu)
Ingredients:
- 500 grams beef skin
- 4 blocks of tofu
- 2 pieces of petai (sliced according to preference)
- 5 shallots
- 2 cloves of garlic
- 1/2 onion
- 7 green chilies
- 5 red chilies
- 4 bird’s eye chilies (optional for extra heat)
- 1 bay leaf
- 2 kaffir lime leaves
- 1 tablespoon oyster sauce
- Soy sauce, salt, and sugar to taste
Instructions:

Prepare the Beef Skin:
- Boil the beef skin for 5-7 minutes until tender. Drain thoroughly and coat with a light layer of cooking oil to prevent sticking.

Sauté Aromatics:
- Heat a little oil in a pan over medium heat. Add the shallots, garlic, onion, bay leaf, and kaffir lime leaves. Sauté until fragrant and the onions turn translucent.

Add Chilies:
- Slice the green chilies, red chilies, and bird’s eye chilies. Add them to the pan, stirring briefly to release their flavors.

Combine Ingredients:
- Introduce the boiled beef skin and tofu blocks to the pan. Stir well to combine with the aromatics and chilies.

Season and Cook:
- Pour in the oyster sauce and a splash of soy sauce. Season with salt and sugar according to taste. Mix thoroughly and cook for a few more minutes until all ingredients are well incorporated and heated through.

- Once everything is well-mixed and heated, remove from heat. Transfer to a serving dish and enjoy warm.
