Contemporary Beef Ribs Soup

Ingredients:

  • 1/2 kg beef ribs (approximately 15 pieces)
  • 3 beef meatballs
  • Carrots (quantity as desired)
  • 5 stalks of scallions
  • 7 shallots
  • 4 cloves of garlic
  • Salt (to taste)
  • Sugar (to taste)
  • Black pepper (to taste)
  • Chili powder (to taste)
  • 2 limes (for juice)
  • 2 ripe tomatoes

Instructions:

  1. Prepare the Beef Ribs:
Start by washing the beef ribs thoroughly. Place them in a large pot and cover with water. Bring to a boil and let it simmer until the water reduces and any scum that forms on the surface is removed. Discard the scum and drain the ribs, then set them aside.

  2. Cook the Aromatics:
In a separate pan, heat some oil and sauté the shallots and garlic that have been finely minced until they release their fragrant aroma. Add the beef meatballs and chopped ripe tomatoes to the pan. Cook until the tomatoes soften and blend with the other ingredients.

  3. Season the Soup:
Add salt, black pepper, sugar, and chili powder to the sautéed mixture. Stir well to combine the flavors. Pour this seasoned mixture into the pot with the beef ribs.

  4. Simmer the Soup:
Add chopped carrots to the pot and stir to mix. Allow the soup to simmer until the carrots are tender. Taste and adjust the seasoning as needed.

  5. Finish the Soup:
Once the carrots are cooked to your liking, add the chopped scallions and freshly squeezed lime juice. The lime juice will add a refreshing tang and enhance the overall flavor of the soup.

  6. Serve:
Serve the contemporary beef ribs soup hot, paired with sambal goreng and steaming rice for a delightful meal that is sure to please the palate. Enjoy!

This modern take on a classic beef ribs soup is perfect for any meal and offers a burst of fresh flavors that complement the hearty ingredients.
