Beef Ribs with Tofu (Iga Sapi Cah Tahu)
Ingredients:
- 250 grams beef ribs
- 5 pieces tofu
- For the Spice Paste:
- 3 red bird’s eye chilies
- 3 large red chilies
- 4 cloves garlic
- 2 shallots
- 1 small onion, sliced
- 2 candlenuts
- 1 tablespoon soy sauce
- Sugar, to taste
- Salt, to taste
- Cooking oil, as needed
- Water, as needed
- Bouillon powder or seasoning, to taste
- 2 bay leaves
- 1 stalk lemongrass, crushed
- 5 large green chilies, sliced diagonally
Instructions:

Prepare the Beef Ribs:
- Begin by boiling the beef ribs in a pot of water until they are tender. Once cooked, remove the ribs from the pot, let them cool slightly, and cut them into large or bite-sized pieces according to your preference.

Prepare the Tofu:
- Cut the tofu into diagonal slices and set aside.

Make the Spice Paste:
- In a blender or mortar and pestle, combine the red bird’s eye chilies, large red chilies, garlic, shallots, candlenuts, and a small portion of the sliced onion. Blend or grind until you achieve a smooth paste.

Cook the Spice Paste:
- Heat some cooking oil in a pan over medium heat. Add the remaining sliced onion and cook until fragrant. Then add the spice paste to the pan and stir-fry until aromatic.

Combine Ingredients:
- Add the beef ribs and tofu to the pan with the spice paste. Stir to coat them evenly with the paste.

Season and Simmer:
- Add sugar and salt to taste. Pour in enough water to cover the mixture slightly. Add the lemongrass, bay leaves, soy sauce, and bouillon powder or seasoning. Stir well and let the mixture simmer until the flavors meld together and the tofu absorbs the seasoning.

Add Green Chilies:
- Finally, add the sliced green chilies. Stir and cook for a few more minutes, allowing the chilies to soften slightly.

- Taste the dish and adjust seasoning if necessary. Once the flavors are balanced and the tofu is well-seasoned, turn off the heat.
