Ayam Suwir Kecap: A Delightful Indonesian Shredded Chicken Dish

Ingredients:

  • 2 chicken breasts
  • 1 packet fried chicken seasoning mix
  • 4 shallots, sliced
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground coriander
  • 1 piece galangal, crushed
  • Sweet soy sauce (kecap manis), to taste
  • 2 bay leaves
  • 1 chicken bouillon cube or other bouillon powder
  • Salt, to taste
  • Granulated sugar, to taste
  • A splash of water
  • Fresh peas, as needed
  • 2 tablespoons butter or margarine, for sautéing

Instructions:

  1. Prepare the Chicken:

    • Place the chicken breasts in a pot and cook with the fried chicken seasoning mix. Simmer until the water evaporates and the chicken is fully cooked and tender.
    • Remove the chicken from the pot and let it cool. Once cooled, shred the chicken into bite-sized pieces.
  2. Sauté the Aromatics:

    • In a large skillet or wok, melt the butter or margarine over medium heat. Add the sliced shallots, minced garlic, bay leaves, and crushed galangal. Sauté until the mixture becomes fragrant and the shallots are translucent.
  3. Combine Ingredients:

    • Add the shredded chicken to the skillet. Stir to coat the chicken evenly with the aromatic mixture.
    • Pour in a splash of water to help the flavors meld together.
  4. Flavor and Season:

    • Stir in the sweet soy sauce and granulated sugar. Crumble in the chicken bouillon cube or sprinkle in the bouillon powder.
    • Taste the dish and adjust seasoning with salt if needed.
  5. Finish and Serve:

    • Continue cooking until the sauce is nearly reduced and thickened. Stir in the fresh peas and cook until they are heated through.
    • Serve the Ayam Suwir Kecap hot, either on its own or with steamed rice.
