Ingredients
For the Resoles Dough
- 1 cup milk
- 1 large egg
- 2 cups all-purpose flour (preferably Blue Triangle brand)
- 2 tablespoons melted butter
For the Filling
- 500 grams ground beef
- 3 carrots, finely chopped
- 2 cloves onion, minced
- 2 stalks green onions, chopped
- 4 hard-boiled eggs, peeled and chopped
- 1 block Mozzarella cheese, cut into small cubes
- 2 boiled potatoes, mashed
- 2 teaspoons salt
- 1 teaspoon black pepper
- 4 stalks celery, finely chopped
- 1/2 cup milk
For Frying
- 1 large egg, beaten
- 1 cup bread crumbs
- Vegetable oil, for deep frying
Instructions
1. Prepare the Resoles Dough:
- In a mixing bowl, combine 1 cup of milk, 1 beaten egg, 2 cups of all-purpose flour, and 2 tablespoons of melted butter. Stir well until the mixture is smooth and free of lumps.
- Heat a non-stick pan or skillet over low heat. Pour a small amount of the batter into the pan, spreading it evenly to form a thin layer. Cook until the edges start to lift and the surface looks set. Remove from the pan and set aside. Repeat with the remaining batter.
2. Prepare the Filling:
- In a large skillet, sauté minced onions until they become fragrant and translucent.
- Add finely chopped carrots to the skillet and cook until they start to soften.
- Add the 500 grams of ground beef and cook until it is browned and fully cooked. Season with 2 teaspoons of salt.
- Incorporate the mashed boiled potatoes and 1/2 cup of milk into the mixture. Stir until well combined and the mixture is slightly thickened.
- Add the chopped celery and green onions. Season with 1 teaspoon of black pepper and mix thoroughly. Allow the filling to cool slightly.
3. Assemble the Resoles:
- Take one piece of the prepared dough and spread a thin layer of beaten egg over it.
- Spoon a portion of the beef filling onto the center of the dough.
- Place a few cubes of Mozzarella cheese and some chopped hard-boiled eggs on top of the filling.
- Roll up the dough, encasing the filling, and seal the edges.
- Brush the outside of the roll with beaten egg and then coat it with bread crumbs, pressing gently to adhere.
4. Fry the Resoles:
- Heat vegetable oil in a deep pan or fryer to 350°F (175°C).
- Fry the prepared resoles in batches, making sure they are fully submerged in the hot oil. Cook until golden brown and crispy, about 3-4 minutes per side.
- Remove the resoles from the oil and drain on paper towels to remove excess oil.
5. Serve:
- Serve the Resoles Beef Mozza warm, accompanied by your favorite dipping sauce or fresh chili peppers for a spicy kick.
