Ingredients

For the Beef Mixture:

  • 300 grams ground beef
  • 1 large onion, finely chopped
  • 3 shallots, thinly sliced
  • 1 stalk green onion, thinly sliced
  • 1/2 teaspoon white pepper powder
  • 1/2 teaspoon black pepper powder
  • Sweet soy sauce, to taste
  • 2 tablespoons oyster sauce
  • 1 tablespoon soy sauce
  • Salt, to taste
  • Sugar, to balance the flavors
  • Water, as needed
  • 1 teaspoon flour, dissolved in a little water

For the Fried Garlic Oil:

  • 300 grams chicken skin
  • 6 cloves garlic, crushed
  • 100 ml cooking oil

For the Broth:

  • 1.5 liters chicken stock (from boiling chicken feet and bones)
  • 3 cloves garlic, crushed
  • Ground pepper, to taste
  • Salt, to taste
  • Bouillon powder, to taste
  • 1 stalk green onion, chopped

For Serving:

  • Boiled egg noodles
  • Soy sauce
  • Blanched green mustard greens
  • Boiled beef meatballs
  • Cucumber, sliced
  • Chili sauce
  • Sweet soy sauce
  • Sliced green onions
  • Fried shallots

Instructions

1. Prepare the Beef Mixture:

  1. Heat a pan over medium heat and add a little oil. SautΓ© the finely chopped onion and garlic until fragrant and golden brown.
  2. Add the ground beef and cook until it changes color and is well browned.
  3. Pour in water and add sweet soy sauce, oyster sauce, soy sauce, white pepper powder, and black pepper powder. Season with salt and sugar to taste.
  4. Simmer until the water reduces and the mixture thickens. Add the flour mixture to thicken the sauce further. Stir well and cook until evenly mixed. Set aside.

2. Prepare the Fried Garlic Oil:

  1. In a non-stick pan, cook the chicken skin over medium heat until it becomes crispy and golden brown.
  2. Add the crushed garlic and continue cooking until the garlic is fragrant and turns golden.
  3. Remove from heat and strain out the chicken skin, keeping the garlic oil for later use.

3. Prepare the Broth:

  1. Bring the chicken stock to a boil in a large pot.
  2. Add the crushed garlic, ground pepper, salt, and bouillon powder to taste. Let it simmer for a few minutes to develop the flavors.
  3. Add the chopped green onions and continue to cook for an additional 7 minutes if using a pressure cooker, or longer if using a regular pot.

  2. Add the blanched green mustard greens and boiled egg noodles to the bowl, and toss to coat evenly.
