Stir-Fried Fern with Oyster Sauce and Beef Meatballs
Ingredients:
- 2 bunches of fern (pakis)
- 4 beef meatballs, thinly sliced
- 4 shallots
- 1 large garlic clove
- 5 bird’s eye chilies (cabe rawit)
- 1 sachet of oyster sauce
- 1 slice of galangal
- 1 bay leaf
- Brown sugar, to taste
- Salt, to taste
- Cooking oil, for sautéing
- 1/2 cup water
Instructions:

Prepare the Fern:
- Select tender shoots and leaves from the fern. Rinse thoroughly and set aside.

Prepare the Aromatics:
- Thinly slice the shallots, garlic, and bird’s eye chilies.

Sauté the Aromatics:
- Heat oil in a pan over medium heat. Add the sliced shallots, garlic, and chilies. Sauté until they become soft and aromatic.

- Introduce the galangal slice and bay leaf to the pan, continuing to sauté for a minute.

- Pour in the water, and add salt, brown sugar, and the sachet of oyster sauce. Stir well to combine.
