- 1/4 kg beef (can also use short ribs)
- 2 carrots, cut into pieces
- 2 potatoes, cut into pieces
- 1 tomato, cut into pieces
- 1 stalk celery
- 1 stalk green onion
For the Broth:
- 4 shallots, thinly sliced
- 3 garlic cloves, crushed and finely chopped
- 1/2 onion
- 4 cloves
- 1/4 nutmeg, sliced (or nutmeg powder if preferred)
- 1 cinnamon stick
- Ground coriander, to taste
- Salt, to taste
- Pepper, to taste
- Beef bouillon powder, to taste

Boil the beef briefly until it is half-cooked, allowing any impurities and excess fat to rise to the surface. Discard the foam that forms. For a cleaner broth, you can discard the first boiling water and start with fresh water; this will make the soup less greasy and remove any unpleasant odors.
