- 2 cups of semi-sweet chocolate chips
- 30 caramels, unwrapped
- 3 tablespoons of water
- 2 tablespoons of butter
- 1 cup of salted peanuts (chopped if preferred)
Instructions
-
Prepare the Chocolate Base:
- In a double boiler, combine 2 cups of semi-sweet chocolate chips and 2 tablespoons of shortening.
- Heat over medium heat, stirring constantly, until the chocolate and shortening are fully melted and smooth.
- Once melted, carefully remove the mixture from the heat.
-
Set the First Layer:
- Pour half of the melted chocolate mixture into an 8-inch square pan lined with foil, ensuring the foil hangs over the edges for easy removal later.
- Spread the chocolate evenly across the bottom of the pan.
- Place the pan in the refrigerator and allow it to chill until the chocolate layer is firm, about 20 minutes.
-
Make the Caramel Filling:
- In a medium saucepan, combine 30 unwrapped caramels, 3 tablespoons of water, and 2 tablespoons of butter.
- Heat the mixture over low heat, stirring frequently, until the caramels and butter are completely melted and the mixture is smooth.

Add the Peanuts:
- Stir 1 cup of chopped peanuts into the caramel mixture until evenly distributed.
-
Assemble the Bars:
- Pour the caramel and peanut mixture over the chilled chocolate layer in the pan, spreading it evenly with a spatula.
- Pour the remaining melted chocolate over the caramel layer, spreading it out to cover the top completely.
-
Chill and Cut:
- Return the pan to the refrigerator and let it chill for about 1 hour, or until the bars are firm.
- Once set, use the foil overhang to lift the bars out of the pan.
- Cut into bite-sized pieces and enjoy!
