Ingredients:

Main Ingredients:

  • 1/2 kg beef, cut into cubes
  • Salt, to taste
  • Seasoning, to taste

For the Ground Spices:

  • 4 cloves garlic
  • 1/2 inch turmeric
  • 1/2 inch ginger
  • 2 candlenuts
  • 2 shallots

For the Aromatic Spices:

  • 1/2 inch galangal, crushed
  • 1 stalk lemongrass, crushed
  • 2 kaffir lime leaves
  • 1 tablespoon ground white pepper
  • 1 teaspoon palm sugar
  • 1 packet Kara coconut milk

Garnishes:

  • 1 stalk scallion, thinly sliced
  • 2 red tomatoes, thinly sliced
  • Sambal (chili sauce)
  • Sweet soy sauce
  • Fried shallots
  • Fried melinjo crackers (emping)

Instructions:

  1. Prepare the Beef:

    • Cut the beef into cubes and rinse briefly. Boil the beef until tender.
  2. Prepare the Ground Spices:

    • In a mortar and pestle or a food processor, grind the garlic, turmeric, ginger, candlenuts, and shallots into a smooth paste.
  3. Cook the Aromatic Spices:

    • In a pan, heat a little oil and sauté the ground spices until fragrant.
    • Add the crushed galangal, lemongrass, and kaffir lime leaves to the pan. Stir until aromatic.
  4. Combine and Simmer:

    • Add the sautéed spice mixture, along with its oil, to the pot with the boiling beef.
    • Season with salt, ground white pepper, and palm sugar. Allow the flavors to meld and the spices to infuse the beef, cooking until the beef absorbs the flavors and becomes tender.
  5. Finish with Coconut Milk:

    • Once the beef is tender and the flavors have melded, adjust the seasoning with additional seasoning powder if needed.
    • Add the Kara coconut milk, stirring gently. Cook for a few more minutes until well combined, then remove from heat.
  6. Serve and Garnish:

    • Serve the Soto Daging Sapi hot, garnished with thinly sliced scallions, tomato slices, fried shallots, and fried melinjo crackers.
    • Add a splash of sweet soy sauce and a dollop of sambal to taste.

Tips for the Perfect Soto Daging Sapi:

  • For a richer flavor, let the soup simmer on low heat for a longer time to allow the beef to fully absorb the spices.
  • Adjust the amount of chili sauce to suit your preferred level of spiciness.
  • Fresh ingredients, especially the aromatic spices like lemongrass, galangal, and kaffir lime leaves, make a significant difference in the flavor profile of the dish.

Enjoy your Soto Daging Sapi, a delicious and authentic Indonesian beef soup that will warm your heart and soul. This recipe is sure to become a favorite in your culinary repertoire. Happy cooking!
