Title: Crispy Fried Beef Tendon (Kikil Sapi Goreng)

Ingredients:

  • 250 grams beef tendon, cleaned and cut into pieces
  • 2 cloves garlic
  • 1 tablespoon coriander seeds
  • 1 bay leaf
  • Salt, to taste
  • Sugar, to taste
  • Ground black pepper, to taste

Instructions:

  1. Prepare the Tendon:
    Begin by placing the beef tendon pieces into a pot of boiling water. Allow them to cook for about 10 minutes to remove any impurities and excess foam. After this initial cooking, discard the water, rinse the tendons under cold water to clean them thoroughly, and then return them to the pot.

  2. Flavor the Tendon:
    Add a bay leaf to the pot with the cleaned tendons. Bring to a simmer. Meanwhile, grind the garlic and coriander seeds into a fine paste.

  3. Simmer with Spices:
    Stir the ground garlic and coriander paste into the pot with the simmering tendons. Season with salt, sugar, and ground black pepper to taste. Continue to simmer until the liquid reduces and the tendons are tender and flavorful, ensuring the seasoning is adjusted to your preference.

  4. Fry the Tendon:
    Once the tendons are well-seasoned and the liquid has mostly evaporated, heat oil in a frying pan over medium-high heat. Fry the tendons until they are crispy and golden brown.

  5. Serve:
    Remove the tendons from the oil and drain on paper towels. Serve hot as a delicious snack or appetizer.
