Authentic Indonesian Beef Curry with Coconut Milk

Kare Sapi: Indonesian Beef Curry Recipe

Ingredients:

  • 500 grams of beef, boiled until tender
  • 1 liter coconut milk

Spice Paste:

  • 7 shallots, peeled
  • 4 cloves garlic, peeled
  • 2 candlenuts, toasted
  • 1 thumb-sized piece of ginger
  • 1 thumb-sized piece of turmeric
  • 1 tablespoon coriander seeds, toasted
  • 1 teaspoon black peppercorns, toasted
  • 1 teaspoon cumin seeds, toasted
  • 10 red chilies (adjust to taste; can be mixed with bird’s eye chilies for extra heat)

Additional Ingredients:

  • 2 star anise, toasted
  • 1 cinnamon stick, toasted
  • 3 cardamom pods, toasted
  • 1 stalk lemongrass, bruised
  • 1 thumb-sized piece of galangal
  • 2 bay leaves
  • 2 kaffir lime leaves
  • Sugar and salt, to taste
  • Optional: chicken bouillon powder for additional flavor

Instructions:

  1. Prepare the Beef:

    • Boil the beef in water for approximately one hour until tender. Remove from heat, drain, and cut into bite-sized cubes.
  2. Prepare the Spice Paste:

    • Blend the shallots, garlic, candlenuts, ginger, turmeric, toasted coriander, black peppercorns, cumin seeds, and red chilies into a smooth paste.
  3. Cook the Spice Paste:

    • Heat a little oil in a large pot over medium heat. SautΓ© the spice paste until fragrant and cooked through.
  4. Add Aromatics:

    • Add the toasted star anise, cinnamon stick, and cardamom pods to the pot. Also, include the lemongrass, galangal, bay leaves, and kaffir lime leaves. Stir well to combine and allow the flavors to meld for a few minutes.
  5. Add Coconut Milk:

    • Pour in the coconut milk, stirring constantly to prevent curdling. Bring to a gentle simmer.
  6. Add Beef:

    • Add the beef cubes to the pot. Stir to coat the meat with the curry sauce. Reduce the heat to low and let it simmer for 30 to 60 minutes, or until the sauce thickens and the beef is tender and flavorful.
  7. Seasoning:

    • Season with sugar and salt to taste. If desired, add a pinch of chicken bouillon powder for extra depth of flavor.
  8. Finishing Touches:

    • Turn off the heat and let the curry rest until it is warm. Serve it hot, accompanied by steamed rice or your favorite side dishes.
