For the Spice Paste (Bumbu Halus):
- 6 red chilies, deseeded
- 3 bird’s eye chilies (adjust to taste)
- 6 cloves garlic
- 9 shallots
- 2 teaspoons ground pepper
- 3 teaspoons salt
- 2 teaspoons granulated sugar
- 2 teaspoons toasted coriander seeds
- 1 teaspoon toasted cumin seeds
- 5 cm fresh turmeric
- 2 cm fresh ginger
- 2 cm fresh galangal
For Garnish:
- Fried shallots

- Heat 600 ml of water in a large pot over medium heat.
- Add the beef, spice paste, turmeric leaf, kaffir lime leaves, lemongrass, and curry powder to the water. Stir to combine.
- Cover and let the mixture simmer until the water reduces and the beef becomes tender. This process will intensify the flavors and ensure the beef absorbs all the spices.
