Sate Padang Daging Sapi is a rich and flavorful Indonesian beef skewer dish, renowned for its aromatic spices and savory sauce. Ingredients:

  • 500 grams of beef
  • 1 turmeric leaf (daun kunyit)
  • 4 kaffir lime leaves (daun jeruk)
  • 1 stalk lemongrass, bruised
  • 650 ml water
  • 2-3 tablespoons rice flour
  • 2 teaspoons curry powder

For the Spice Paste (Bumbu Halus):

  • 6 red chilies, deseeded
  • 3 bird’s eye chilies (adjust to taste)
  • 6 cloves garlic
  • 9 shallots
  • 2 teaspoons ground pepper
  • 3 teaspoons salt
  • 2 teaspoons granulated sugar
  • 2 teaspoons toasted coriander seeds
  • 1 teaspoon toasted cumin seeds
  • 5 cm fresh turmeric
  • 2 cm fresh ginger
  • 2 cm fresh galangal

For Garnish:

  • Fried shallots

Instructions:

  1. Prepare the Broth:

    • Heat 600 ml of water in a large pot over medium heat.
    • Add the beef, spice paste, turmeric leaf, kaffir lime leaves, lemongrass, and curry powder to the water. Stir to combine.
    • Cover and let the mixture simmer until the water reduces and the beef becomes tender. This process will intensify the flavors and ensure the beef absorbs all the spices.
  2. Prepare the Beef:

    • Once the beef is tender, remove it from the pot and let it cool slightly. Cut the beef into bite-sized cubes.
    • Do not discard the remaining broth; it will be used later to make the sauce.
  3. Skewer the Beef:

    • Thread the beef cubes onto skewers, securing them tightly.
  4. Grill the Skewers:

    • Preheat a grill pan or an outdoor grill over medium heat.
    • Grill the beef skewers until they are nicely charred and aromatic. While grilling, occasionally brush the skewers with a little cooking oil to keep them moist.
  5. Prepare the Sauce:

    • In a separate bowl, dissolve rice flour in a small amount of water to create a slurry.
    • Gradually add this slurry to the reserved beef broth while stirring continuously to achieve the desired consistency.
    • Simmer the sauce until it thickens. Adjust the seasoning if necessary.
  6. Serve:

    • Once the beef skewers are grilled and the sauce is ready, serve the Sate Padang on a platter.
    • Drizzle the sauce generously over the skewers.
    • Garnish with fried shallots for an extra crunch and flavor.
