Practical Chicken Dendeng

Ingredients:

  • 1/4 chicken breast
  • 1/2 cup grated coconut
  • 1 sachet chicken-flavored Royco seasoning
  • 4 tablespoons tapioca starch
  • Oil for frying

For the Spice Paste:

  • 4 shallots
  • 3 cloves garlic
  • 1 cm piece of turmeric
  • 1 cm piece of ginger
  • 1 teaspoon ground coriander
  • 1 kaffir lime leaf

Instructions:

  1. Begin by washing the chicken breast thoroughly. Slice it thinly, or chop it if you prefer smaller pieces.

  2. Prepare the spice paste by finely grinding the shallots, garlic, turmeric, ginger, ground coriander, and kaffir lime leaf until smooth. Transfer the paste to a separate bowl.

  3. Add the thinly sliced chicken to the bowl with the spice paste. Mix well, ensuring the chicken is evenly coated with the spices.

  4. Next, incorporate the tapioca starch and grated coconut into the chicken mixture. Sprinkle in the chicken-flavored Royco seasoning. Mix everything together until well combined.

  5. Adjust the seasoning to taste. Shape the mixture into your desired form, such as patties or thin strips.

  6. Heat oil in a frying pan over medium heat. Fry the chicken pieces until golden brown and crispy, making sure to avoid burning the coconut.

  7. Continue frying until all the chicken is cooked and crispy.

  8. Remove the cooked chicken from the pan and drain on paper towels to remove excess oil.

  9. Serve the chicken dendeng warm and enjoy!
