Ingredients

For the Dough:

  • 125 grams all-purpose flour (Cakra)
  • 25 grams cake flour (Segitiga)
  • 15 grams sweetened condensed milk
  • 20 grams granulated sugar
  • 1 tablespoon milk powder
  • 1 teaspoon instant yeast
  • 1 egg yolk
  • 70 milliliters milk
  • 2 grams salt
  • 25 grams butter, softened

For the Topping:

  • 1 egg white
  • Red chili, sliced and deseeded
  • Green onion, sliced (green parts only)
  • Sesame seeds, to taste

For the Filling:

  • 1 sachet mayonnaise
  • 1 tablespoon sweetened condensed milk
  • 1 teaspoon chili sauce
  • Beef floss (Abon sapi), to taste

Instructions

  1. Prepare the Dough:

    • In a mixing bowl, combine the all-purpose flour, cake flour, sweetened condensed milk, granulated sugar, milk powder, and instant yeast. Mix well.
    • Gradually add the milk and egg yolk to the dry ingredients, stirring until a dough begins to form.
    • Add the softened butter and salt. Knead the dough until it becomes smooth and elastic.
    • Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for 40 minutes, or until doubled in size.
  2. Shape and Pre-Bake:

    • After the dough has risen, punch it down and roll it out on a lightly floured surface to fit a greased 20×20 cm baking pan.
    • Place the rolled dough into the greased pan and spread it evenly. Let it rest for another 15 minutes to rise slightly.
    • Preheat your oven to 180°C (350°F). Brush the top of the dough with egg white and sprinkle with sesame seeds, red chili slices, and green onion.
    • Using a fork, gently prick the surface of the dough to prevent it from puffing up too much during baking.
  3. Bake the Dough:

    • Bake the dough in the preheated oven for 10-15 minutes, or until golden brown. If using a gas oven or toaster oven, set the top heat to high for the last 5 minutes to achieve a nicely browned top.
  4. Prepare the Filling:

    • While the dough is baking, mix together the mayonnaise, sweetened condensed milk, and chili sauce to create the filling.

    • Once the dough is baked, remove it from the oven and let it cool slightly. Turn the bread out of the pan and make shallow cuts across the surface, being careful not to cut all the way through.
