Ayam Geprek: Spicy Indonesian Fried Chicken Delight
Ingredients:
- Chicken, as needed
- 2 small packets of Sajiku flour
- 4 cloves of shallots
- 3 cloves of garlic
- A handful of chilies
- Salt, to taste
- MSG (vetsin), to taste
- Sugar, to taste
Steps:

Prepare and Fry the Chicken:
- Coat the chicken thoroughly with Sajiku flour.
- Fry the chicken until it turns a golden brown. Once done, remove from the oil and set aside.

Prepare the Spices:
- Fry the shallots until golden brown, then remove and set aside.
- Fry the garlic until fragrant, then remove and set aside.
- Turn off the heat and add the chilies to the hot oil briefly, then remove.

Make the Spice Paste:
- Using a mortar and pestle, grind the fried shallots, garlic, and chilies together.
- Add salt, MSG, and sugar to taste, and continue to grind until well mixed. Taste and adjust seasoning if necessary.

Combine and Serve:
- Place the fried chicken into the mortar with the spice paste and crush the chicken to combine it with the spices.
- Serve the ayam geprek hot, garnished with additional chilies if desired.
