- In a large pot, bring 1.5 liters of water to a boil. Add the beef ribs and cook until the water starts to bubble. Skim off any foam that rises to the surface to reduce the fat and clarify the broth.

- Once the ribs are partially tender, add the lemongrass, bay leaves, galangal, and red chilies. Stir well to combine.
- Reduce the heat and let the ribs simmer until they are tender and the flavors meld together, about 1 to 1.5 hours. Adjust the heat as needed to maintain a gentle simmer.
