Ayam Kremes Recipe

Ingredients:

  • 1/4 kg chicken (ayam)
  • 1/4 packet of fried chicken seasoning mix (bumbu racik ayam goreng)
  • 1 stalk lemongrass (sereh)
  • 2 bay leaves (daun salam)
  • 2 cm galangal (lengkuas)
  • 3 tablespoons tapioca flour (tepung tapioka)
  • 250 ml chicken cooking water (air ungkepan ayam)
  • 1/2 egg
  • Cooking oil (for frying)

Instructions:

  1. Prepare the Chicken: Start by cleaning the chicken thoroughly. Briefly boil the chicken to remove any impurities, then discard the water and rinse the chicken again.

  2. Season and Cook: Combine the chicken with the fried chicken seasoning mix. Add enough water to submerge the chicken completely. Introduce the bay leaves, lemongrass, and galangal to infuse the chicken with a fragrant aroma. Cook over low heat until the seasoning has penetrated the chicken and the water has reduced. Adjust seasoning to taste.

  3. Cool and Strain: Once the chicken is cooked and cool, strain the cooking liquid. In a bowl, mix the tapioca flour and half an egg into the strained cooking liquid until well combined.

  4. Fry the Kremes: Heat a generous amount of cooking oil in a frying pan. Pour the flour mixture into the hot oil in a circular motion from a height of approximately 30 cm (12 inches) to create crispy flakes. Fry twice to ensure a crispy texture.

  5. Add the Chicken: Place the cooked chicken in the center of the crispy flakes. Fold the flakes over the chicken to cover it completely. Continue frying over low heat until the kremes are golden brown and crispy.

  6. Serve: Carefully remove the ayam kremes from the oil and drain excess oil on paper towels. Serve hot for a delightful and crispy chicken dish.
