Soto Daging Sapi (Indonesian Beef Soup)

Ingredients:

  • 500 g beef (soup meat)
  • 2.5 L water

Seasoning:

  • 2 stalks lemongrass, bruised
  • 2 bay leaves
  • 2 slices galangal, bruised
  • 1 slice ginger, bruised
  • 1 slice turmeric, bruised
  • 3 kaffir lime leaves
  • 1 stalk green onion
  • Salt and sugar to taste
  • Optional: broth powder

Spice Paste:

  • 8 cloves shallots
  • 5 cloves garlic
  • 1 tbsp coriander seeds
  • 1/2 tbsp pepper

Garnishes:

  • Sliced cabbage
  • Short bean sprouts
  • Chopped celery
  • Fried shallots
  • Fried garlic
  • Lime wedges
  • Soto chili paste
  • Fried tempeh
  • White crackers

Instructions:

  1. Pressure Cook the Beef:
    Begin by placing the beef in a pressure cooker with 2.5 liters of water, adding the bay leaves, lemongrass, and a pinch of salt. Pressure cook the beef for approximately 20 minutes until tender.

  2. Separate and Strain:
    Once cooked, separate the beef from the broth and strain the broth to remove any impurities. Set both the beef and the broth aside.

  3. Prepare the Spice Paste:
    In a blender or mortar and pestle, blend the shallots, garlic, coriander seeds, and pepper into a smooth paste.

  4. Sauté the Spice Paste:
    Heat a little oil in a pan and sauté the spice paste along with the bruised galangal, ginger, and turmeric until fragrant and the spices have softened.

  5. Combine Ingredients:
