Tahu Fantasy with Beef Sausages (Sakura Mold)
Ingredients:
Main Ingredients:
- 5 large firm tofu blocks
- 1 medium carrot, cleaned and peeled
- 1/2 sheet corn vermicelli
- 1 stalk green onion, cleaned
- 7 cloves garlic, peeled and cleaned
- Freshly ground black pepper, to taste
- 3 egg yolks
- Fine salt, to taste
- Beef sausages, cut into small pieces
For Dipping Batter:
- 3 egg whites
- 1 tablespoon tapioca flour
- 1 tablespoon rice flour
- 1 tablespoon cornstarch
- Fine salt, to taste
Instructions:

Prepare Tofu:
- Begin by finely mashing the tofu. A traditional method is to use a pestle and mortar, but you can also use a food processor for convenience. Once mashed, place the tofu in a bowl and set aside. There is no need to press the tofu.

Prepare Carrot:
- Grate the carrot using a cheese grater and add it to the bowl with the mashed tofu.

Prepare Corn Vermicelli:
- Soak the corn vermicelli in hot water until it becomes soft, then drain it thoroughly.

Prepare Green Onions:
- Finely chop the green onions and add them to the bowl with tofu and grated carrot.

Prepare Garlic:
- Mince the garlic and add it to the mixture in the bowl.

Combine Ingredients:
- Add the soaked corn vermicelli, egg yolks, and season with black pepper and fine salt. Mix everything until well combined. Adjust seasoning to taste.

Prepare the Mold:
- Before pouring the mixture into the mold, grease the mold with a small amount of cooking oil to prevent sticking.

Steam:
- Boil water in a pot for steaming. Pour the tofu mixture into the greased mold and steam over high heat for about 30 minutes. Cover the pot with a clean cloth before placing the lid on to prevent condensation from dripping onto the tofu mixture.

Chill:
- Once steamed, carefully remove the tofu from the mold and let it cool to room temperature. Refrigerate for 30 minutes to firm up.

Prepare Dipping Batter:
- In a separate bowl, whisk together the egg whites, tapioca flour, rice flour, cornstarch, and a pinch of fine salt until smooth.

Fry:
- After the tofu mixture has chilled and firmed up, cut it into desired shapes. Dip each piece into the prepared batter and fry in hot oil until golden and crispy.

Serving:
- Serve the crispy tofu pieces immediately for the best texture. The tofu can be shaped into various forms, like sakura (cherry blossom) or other fun shapes, to make the dish more appealing.

- Beef Sausages: Adding small pieces of beef sausage to the mixture enhances the flavor and adds a delightful texture.
- Refrigeration: The tofu mixture can be refrigerated for a longer period if not frying immediately. This helps in firming it up even more.
