Beef Meatballs with Crispy Potatoes in Coconut Sauce

Tumis Kentang Bola Sapi (Stir-Fried Potatoes with Beef Meatballs)

Ingredients:

For the Meatballs:

  • 250 grams ground beef
  • 1 tablespoon tapioca flour
  • 1 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 500 ml water for boiling

For the Stir-Fry:

  • 3 medium potatoes, diced
  • Oil for frying potatoes
  • 3 shallots, thinly sliced
  • 2 kaffir lime leaves
  • 2 bay leaves
  • 65 ml Kara coconut milk
  • 2 large red chilies
  • 10 green peas (or to taste)
  • Salt, to taste
  • Sugar, to taste
  • Oil for sautéing

For the Spice Paste:

  • 3 cloves garlic
  • 1 candlenut
  • 3 red bird’s eye chilies (or to taste)

Instructions:

  1. Prepare the Potatoes: Heat oil in a pan and fry the diced potatoes until they turn a bright golden color. Remove from the oil and set aside.

  2. Make the Meatballs: In a bowl, mix together the ground beef, tapioca flour, salt, and ground pepper until well combined. Shape the mixture into small meatballs. Boil them in 500 ml of water until they float to the surface. Remove the meatballs from the water and set aside. Reserve the broth for later use.

  3. Cook the Spice Paste: Using a mortar and pestle or food processor, grind the garlic, candlenut, and red chilies into a fine paste.

  4. Stir-Fry: In a wok or large skillet, heat a bit of oil over medium heat. Sauté the sliced shallots until they become translucent. Add the bay leaves and kaffir lime leaves, followed by the ground spice paste. Cook until fragrant.

  5. Add Broth: Pour in about 5 ladles of the reserved meatball broth from Step 2. Bring to a boil.

  6. Season the Sauce: Add salt and sugar to taste. Once the sauce has simmered, add the sliced red chilies and green peas. Allow it to return to a boil, then stir in the Kara coconut milk. Let the mixture cook until it comes to a boil again. Taste and adjust seasoning if necessary with additional salt or sugar.

  7. Combine Ingredients: Add the cooked meatballs to the pan, stirring to combine. Then, add the fried potatoes from Step 1. Gently mix everything together to ensure the meatballs and potatoes are evenly coated with the sauce.

  8. Serve: Once everything is heated through and the flavors are well combined, remove from heat and serve hot.
