Galangal Fried Chicken Wings

- 1 thumb-sized piece of ginger
- 1 lemongrass stalk
- 3 bay leaves
- 4 cloves garlic
- 6 shallots
- 1 teaspoon coriander seeds
- 100 grams galangal
- ½ tablespoon salt
- 1 teaspoon black pepper
- 1 tablespoon granulated sugar
- 1 tablespoon chicken flavor seasoning
- ¾ cup water
- Oil for frying

Prepare the Spice Paste: Begin by finely grinding the garlic, shallots, ginger, turmeric, and coriander seeds into a smooth paste. You can use a mortar and pestle or a blender for this step.
