Spiced Beef Stew (Daging Sapi Masak Rempah)

Ingredients:

  • 1 kg beef, cut into small cubes
  • 2 small cartons coconut milk
  • 20 shallots
  • 20 cloves garlic
  • 10 candlenuts
  • 3 pieces of ginger, peeled
  • 3 pieces of turmeric, peeled
  • 3 pieces of galangal, peeled
  • 1 stalk lemongrass
  • 1 teaspoon black pepper
  • 1 tablespoon salt
  • 2 cups water
  • 4 bay leaves
  • 4 kaffir lime leaves

Instructions:

  1. Prepare the Ingredients:

    • Cut the beef into small cubes for even cooking.
    • Peel the ginger, turmeric, and galangal.
  2. Blend the Spices:

    • In a blender, combine the shallots, garlic, candlenuts, ginger, turmeric, and galangal. Blend until the mixture becomes a smooth paste.
  3. Combine Ingredients:

    • In a large pot, add the blended spice paste, beef cubes, coconut milk, black pepper, salt, and water.
    • Add the bay leaves and kaffir lime leaves. Stir well to mix all the ingredients.
  4. Cook the Stew:

    • Bring the mixture to a boil over medium heat.
    • Reduce the heat to low and let it simmer gently. Stir occasionally to prevent sticking and ensure even cooking.
    • Cook until the beef is tender and the flavors are well developed. This can take about 1.5 to 2 hours, depending on the size of the beef cubes.
  5. Adjust and Serve:

    • Taste the stew and adjust the seasoning if needed.
    • Continue to simmer until the liquid reduces and the stew becomes slightly dry, or to your preferred consistency.
  6. Final Touches:

    • Turn off the heat when the beef is tender and the flavors have melded together beautifully.
