Gulai Tetelan Sapi with Carrots: A Flavorful Indonesian Delight

Gulai Tetelan Sapi, an Indonesian beef stew enriched with aromatic spices and tender vegetables, brings warmth and comfort to the table. This recipe combines juicy beef chunks with carrots in a coconut-based curry sauce, creating a dish that’s both hearty and deeply flavorful. Ingredients:

  • 400 grams of beef rib bones (tetelan sapi)
  • 2 carrots, peeled and sliced
  • 5 shallots
  • 3 cloves of garlic
  • 2 candlenuts
  • 1 thumb-sized piece of turmeric
  • 10 red chili peppers (cabe merah keriting)
  • 6 bird’s eye chilies (cabe rawit)
  • 1 thumb-sized piece of crushed galangal
  • 1 thumb-sized piece of crushed ginger
  • 1 stalk of lemongrass, crushed
  • 2 kaffir lime leaves
  • 1 bay leaf
  • 65 ml of Kara coconut milk
  • 400 ml of water
  • Salt, to taste
  • Sugar, to taste
  • Ground black pepper, to taste
  • Beef broth powder, to taste

Steps:

  1. Prepare the Beef and Vegetables: Cut the beef rib bones into bite-sized pieces and rinse thoroughly. Slice the carrots into rounds or half-moons, depending on your preference.

  2. Prepare the Spice Paste: In a blender, combine the shallots, garlic, candlenuts, turmeric, red chili peppers, bird’s eye chilies, ginger, and black pepper. Blend until you achieve a smooth paste.

  3. Sauté the Spices: Heat a little oil in a large pot over medium heat. Add the spice paste and sauté until fragrant. Add the crushed galangal, crushed lemongrass, and torn kaffir lime leaves. Stir and cook until the spices are well blended and aromatic.

  4. Add Beef and Carrots: Add the beef pieces and sliced carrots to the pot. Stir to coat the beef and carrots with the spice mixture.

  5. Simmer: Pour in the water and stir to combine. Bring the mixture to a boil, then lower the heat and let it simmer. Season with beef broth powder, salt, and sugar to taste. Continue to simmer until the beef is tender and the carrots are cooked through.

  6. Add Coconut Milk: Once the liquid has reduced by about half, stir in the Kara coconut milk. Mix well and allow the stew to simmer until the sauce has thickened and is rich and creamy.

  7. Finish and Serve: Once the stew has reached your desired consistency, taste and adjust seasoning if needed. Remove from heat and serve hot with steamed rice or as a part of your meal.
