Semur Daging Sapi: A Rich and Savory Indonesian Beef Stew

Ingredients:

  • 250 grams (1/4 kg) beef, cut into cubes
  • 3 cloves garlic
  • 2 shallots
  • 5 small red chilies (cabe rawit)
  • 1/4 nutmeg (a small amount)
  • 1 stick cinnamon (15 cm)
  • 2 bay leaves
  • 3 candlenuts
  • 1 packet ground black pepper
  • 1 sachet of coconut milk (santan kara)
  • Sweet soy sauce (kecap manis), to taste
  • Brown sugar, to taste
  • Salt, to taste
  • Lemongrass and ginger (crushed)

Instructions:

  1. Prepare the Beef: Cut the beef into cubes, or slice into fillets based on your preference.

  2. Blend the Spices: In a blender or food processor, combine the garlic, shallots, small red chilies, candlenuts, ground black pepper, salt, and brown sugar. Blend until you achieve a smooth paste.

  3. Cook the Spice Paste: Heat some oil in a large pan or pot. Add the blended spice paste and sauté until it becomes aromatic and slightly golden.

  4. Add Aromatics: Add the bay leaves, cinnamon stick, and crushed lemongrass and ginger to the pan. Stir well to incorporate the flavors.

  5. Incorporate Coconut Milk: Pour in the coconut milk and mix thoroughly with the spice paste. Allow it to come to a simmer.

  6. Add the Beef: Place the cubed beef into the pan. Stir to coat the beef with the spices and coconut milk.

  7. Simmer: Add enough water to the pan to cover the beef. Season with sweet soy sauce (kecap manis) to taste. Let the mixture simmer gently until the beef is tender and the flavors are well combined. This can take around 1 to 1.5 hours.

  8. Adjust Seasoning: Taste and adjust the seasoning with more salt, sugar, or soy sauce if necessary.

  9. Serve: Once the beef is tender and the sauce has thickened to your liking, remove from heat. Serve hot with steamed rice or as desired.
