Beef in Sweet Soy Sauce (Daging Sapi Kecap)
Ingredients:
- 250 grams beef, thinly sliced
- 5 small shallots (or 3 large)
- 2 cloves garlic
- 2 candlenuts
- 1 thumb-sized piece of ginger
- A small piece of galangal
- 1 bay leaf
- 1 stalk lemongrass, bruised
- 3 kaffir lime leaves
- 1/2 teaspoon ground coriander
- 1/4 teaspoon ground pepper
- Salt to taste (approximately 1/2 to 3/4 teaspoon)
- 1/4 teaspoon Royco seasoning
- 2 tablespoons ABC sweet soy sauce
- 1 teaspoon shaved coconut sugar
- 1/2 pot of water
For garnish:
- Fried shallots
- Tomato slices for serving
Instructions:

Prepare the Beef:
- Thinly slice the beef and wash it thoroughly. Place it in a pot with enough water to cover the meat. Cook over medium heat for about 30 to 40 minutes, or until tender. Once cooked, drain and set aside.

Make the Spice Paste:
- In a blender or food processor, combine the shallots, garlic, candlenuts, and ginger. Blend until smooth.

Cook the Aromatics:
- Heat a little oil in a pan over medium heat. Add the blended spice paste and sauté until fragrant.
- Add the bay leaf, kaffir lime leaves, bruised lemongrass, and galangal. Continue to sauté for a few more minutes.

Combine Ingredients:
- Pour in a bit of beef broth from the pot where the beef was cooked. Add the tender beef pieces to the pan.
- Season with salt, ground coriander, ground pepper, coconut sugar, ABC sweet soy sauce, and Royco seasoning. Stir well to combine.

Simmer:
- Cook the mixture for about 10 to 15 minutes, or until the flavors meld and the sauce thickens slightly. Adjust seasoning to taste.

Serve:
- Transfer the beef in sweet soy sauce to a serving dish. Garnish with fried shallots and serve with tomato slices on the side.
