Semur Lidah Sapi ala Bundakeia: A Savory Indonesian Beef Tongue Stew
Ingredients:
- 1 beef tongue
- 1/2 onion, thinly sliced
- 1 ripe tomato, blended and strained
- Salt, white pepper, ground nutmeg, and ground cumin, to taste
- Sweet soy sauce, to taste
- Water, as needed
- Margarine, for sautéing
For the Spice Paste:

- 5 shallots
- 5 cloves garlic
- 5 roasted candlenuts
For Serving:
- Boiled vegetables, to your preference
- Fried potatoes or mashed potatoes, to your preference
Instructions:
-
Prepare the Beef Tongue:
- Begin by boiling the raw beef tongue in water for about 10 minutes. Remove it from the water, peel off the skin, and return it to the pot. Continue boiling until the tongue is tender. If using a pressure cooker, this will significantly reduce the cooking time.
-
Slice the Beef Tongue:
- Once the beef tongue is tender, remove it from the pot and slice it into pieces according to your preference.
-
Prepare the Spice Paste:
- Heat margarine in a pan over medium heat. Add the spice paste ingredients (shallots, garlic, and roasted candlenuts) and sauté until fragrant.
-
Cook the Aromatics:
- Add the sliced onion to the pan and continue to cook until it becomes aromatic.
-
Make the Sauce:
- Pour in enough water to cover the mixture and allow it to simmer until it starts to boil.
-
Add Tomato and Seasonings:
- Stir in the strained tomato (or tomato sauce if preferred) and season with salt, white pepper, ground nutmeg, and ground cumin to taste.
-
Combine and Simmer:
- Add the sliced beef tongue to the pan. Allow it to cook until the sauce has thickened and the flavors have melded together. The tongue should absorb the flavors and become well-seasoned.
-
Serve:
- Serve the Semur Lidah Sapi with your choice of boiled vegetables and either fried or mashed potatoes for a complete meal.
Enjoy this delightful Indonesian beef tongue stew that brings together rich flavors and tender beef tongue, perfect for a hearty and satisfying meal.
