Spicy Red Seasoned Beef Skin

Ingredients:

  • 1/2 kg beef skin or cecek, thinly sliced
  • Ground Spices:
    • 7 shallots
    • 3 cloves garlic
    • 6 red chilies
    • 10 bird’s eye chilies
    • 4 kaffir lime leaves
    • 1/2 teaspoon ground galangal
    • Sugar, to taste
    • Salt, to taste
    • Bouillon powder, to taste
    • Water, as needed
    • Oil, for sautéing

Instructions:

  1. Prepare the Spice Mixture: Begin by blending the shallots, garlic, red chilies, and bird’s eye chilies into a smooth paste. This can be done using a food processor or a traditional mortar and pestle. Set aside.

  2. Sauté the Spices: Heat a generous amount of oil in a large pan over medium heat. Once hot, add the blended spice paste and kaffir lime leaves. Sauté the mixture until it releases a fragrant aroma and the oil begins to separate from the paste.
