Krengsengan Sapi Ala Mai

Ingredients:

  • 1 pack of beef (350 grams, or adjust to your preference)
  • 2 tablespoons sweet soy sauce
  • 2 teaspoons salt
  • 1/4 piece of palm sugar (or 1/2 teaspoon granulated sugar)
  • 1/4 packet beef seasoning (Royco brand)
  • 2 stalks lemongrass, bruised
  • 2 kaffir lime leaves
  • Red chili peppers to taste
  • 1 small onion
  • 1/2 teaspoon shrimp paste
  • Ground Spices:
    • 4 red curly chilies
    • 3 large shallots
    • 2 cloves garlic
    • 2 candlenuts
    • 1/4 inch ginger
    • 1/2 teaspoon black pepper

Steps:

  1. Heat a generous amount of oil in a pan over medium heat. Sauté the ground spices until fragrant.
  2. Add the beef to the pan, stirring until it is evenly coated with the spices.
  3. Introduce the bruised lemongrass and kaffir lime leaves to the pan, stirring to incorporate.
  4. Pour in the sweet soy sauce and add enough water to cover the beef. Cover the pan with a lid and allow the mixture to simmer until the water is slightly absorbed.
  5. Season with salt, black pepper, beef seasoning (Royco), and shrimp paste. Stir well to combine all the flavors.
  6. Add the sliced onion and whole red chilies to the pan. Continue to cook, stirring occasionally, until the beef is tender and the flavors are well melded.
  7. Taste and adjust the seasoning if necessary. Serve hot.

This savory and spicy Krengsengan Sapi Ala Mai is perfect for a hearty meal and showcases the rich flavors of Indonesian cuisine. Enjoy it with steamed rice or your favorite side dishes.
