Krengsengan Sapi Ala Mai
Ingredients:

- 1 pack of beef (350 grams, or adjust to your preference)
- 2 tablespoons sweet soy sauce
- 2 teaspoons salt
- 1/4 piece of palm sugar (or 1/2 teaspoon granulated sugar)
- 1/4 packet beef seasoning (Royco brand)
- 2 stalks lemongrass, bruised
- 2 kaffir lime leaves
- Red chili peppers to taste
- 1 small onion
- 1/2 teaspoon shrimp paste
- Ground Spices:
- 4 red curly chilies
- 3 large shallots
- 2 cloves garlic
- 2 candlenuts
- 1/4 inch ginger
- 1/2 teaspoon black pepper
Steps:
- Heat a generous amount of oil in a pan over medium heat. Sauté the ground spices until fragrant.
- Add the beef to the pan, stirring until it is evenly coated with the spices.
- Introduce the bruised lemongrass and kaffir lime leaves to the pan, stirring to incorporate.
- Pour in the sweet soy sauce and add enough water to cover the beef. Cover the pan with a lid and allow the mixture to simmer until the water is slightly absorbed.
- Season with salt, black pepper, beef seasoning (Royco), and shrimp paste. Stir well to combine all the flavors.
- Add the sliced onion and whole red chilies to the pan. Continue to cook, stirring occasionally, until the beef is tender and the flavors are well melded.
- Taste and adjust the seasoning if necessary. Serve hot.
