- 100 grams curly red chilies
- 5 bird’s eye chilies (adjust to taste for spiciness)
- 2 tablespoons tamarind juice
- 5 shallots
- 1 teaspoon granulated sugar
- Salt to taste
- Cooking oil (for frying and sautéing)

- In a pot, bring water to a boil. Add the finely chopped garlic, shallots, coriander, salt, palm sugar, and ginger. Stir to combine.
