Spicy Pindang Beef Trotters
Ingredients:
- 1 beef trotter, pre-cooked until tender
- 3 stalks of lemongrass, bruised
- 4 kaffir lime leaves
- Tamarind paste, to taste
- Sweet soy sauce, to taste
- Red bird’s eye chilies, to taste
For the Spice Paste:
- Red chilies
- Red bird’s eye chilies
- Shallots
- Garlic
- Fresh turmeric, peeled
- Black pepper
- Shrimp paste

Prepare the Spice Paste: Blend the red chilies, red bird’s eye chilies, shallots, garlic, fresh turmeric, black pepper, and shrimp paste into a smooth paste. You can use a mortar and pestle or a blender for this process.
