Spicy Pindang Beef Trotters

Ingredients:

  • 1 beef trotter, pre-cooked until tender
  • 3 stalks of lemongrass, bruised
  • 4 kaffir lime leaves
  • Tamarind paste, to taste
  • Sweet soy sauce, to taste
  • Red bird’s eye chilies, to taste

For the Spice Paste:

  • Red chilies
  • Red bird’s eye chilies
  • Shallots
  • Garlic
  • Fresh turmeric, peeled
  • Black pepper
  • Shrimp paste

Instructions:

  1. Prepare the Spice Paste: Blend the red chilies, red bird’s eye chilies, shallots, garlic, fresh turmeric, black pepper, and shrimp paste into a smooth paste. You can use a mortar and pestle or a blender for this process.

  2. Cook the Spice Paste: Heat a little oil in a pan over medium heat. Add the spice paste and sauté until fragrant and the oil starts to separate from the paste.

  3. Simmer the Beef Trotters: In a large pot, bring water to a boil. Add the pre-cooked beef trotters and the sautéed spice paste. Stir well to combine.

  4. Add Remaining Ingredients: Add the bruised lemongrass, kaffir lime leaves, tamarind paste, and sweet soy sauce. Adjust the seasoning according to your taste preference.

  5. Simmer and Serve: Allow the mixture to simmer until all the flavors meld together and the trotters are well-coated with the sauce. Taste and adjust seasoning if necessary.

  6. Serve Hot: Once the dish is flavorful and well-seasoned, remove from heat. Serve hot with steamed rice or as a part of a larger meal.
